Hudson Sparkling Wine

Hello there! Today I want to share an amazing recipe and toss out a suggestion as to what to have to drink with it. Indeed my family is always happy to hear that we are having chicken fried steak, mashed potatoes, gravy, and veggies for dinner! This is a pretty easy recipe but always feel free to modify for taste. Tonight we are having a wonderful Hudson Sparkling Wine that I got from the best Wine of the Month Club out there!

Chicken Fried Steak Recipe

What You Will Need:

2 lbs. Boneless, Skinless Chicken Thys

4 c Flour

2 c Bread Crumbs

2 tbs Salt

4 tbs Pepper

1 tbs Black Garlic or Garlic Powder

1 tbs Dried Mustard

4 Eggs

1 c Buttermilk

1/4 c Yellow Mustard

Oil (for frying)

Raw or Already Mashed Potatoes

Chicken Gravy (I use an already prepared from a jar)

Fresh, canned, or frozen vegetables of your choice

What To Do:

First we start by pre-heating our deep fryer. You can also put oil into a skillet and fry that way. Then we mix our dry ingredients and seasonings. It is important to remember that you will need a bowl big enough to dredge your chicken.

Next, flatten your chicken thys. We put down parchment paper with saran wrap on top of it. Then place your chicken on the covered work area and cover with more wrap if you are worried about splatter. If you have a mallet safe for food, bash away at your chicken. Indeed this is great on a stressful day, to let go of a little anger. Another great tool is your rolling pin. In the end you want your chicken to be about 1/4 in thick.

Now mix your wet wash using the eggs, buttermilk, and mustard. Of course you will need a bowl big enough to dip your chicken. The addition of the yellow mustard is a trick that dear friend of mine gave me. It really gives all fried chicken a great flavor! If you want to spice it up a little, you can also add your favorite hot sauce to your wet wash!

Get that dry dredge all together using the flour, bread crumbs, salt, pepper, dried mustard, and the garlic of your choice. We use a whisk to get all of the seasonings and spices mixed really well.

You’re almost finished!

Finally take your flattened chicken and dip it into the wet wash followed by the dry dredge. Of course if you like extra crispy simply repeat the last steps, re-dip into the wet and follow with the dry. Now carefully drop into your oil and keep an eye for it to turn a golden brown. It is also very important to get it up to 165 degrees. With them being so thin it should get to temp easy.

Of course it is easier on our super busy days we grab an already prepared container of mashed potatoes. On the less busy ones I certainly make them homemade. Either way keep in mind the time that it takes. If you go with scratch you will want to get your potatoes going before you start your chicken. That way you can flatten your chicken while they boil and the risk of cross contamination goes down considerably. As for the gravy, I go with one from a jar. My mom is great at gravy, me on the other hand cannot figure it out at all!

Fresh, canned, or frozen veggies all work great! We go fresh when possible but our second go to is frozen for sure! On this night we went with a bag of mixed frozen veggies to keep it simple, and I love the color it adds to the plate!
