Homemade Hot Sauce

If you are anything like my husband and I, you love Homemade Hot Sauce! We grow different peppers every year, and usually get so many that we can’t keep up on the picking of them! Of course we use them to add heat and flavor to our meals but discovered that even after giving them away to friends and family we still had to throw a lot away. So we put our big brains together and decided that if we make Homemade Hot Sauce it will last forever in! My husband loves the Super Hot Peppers, but my limit is around Habanero. We grow peppers on all levels of the Scoville Scale from Jalapenos to Carolina Reapers and we always start from seed. After trying a few different recipes we came to the conclusion that this one is great for all pepper heats!

Very important to realize is that Super Hot Peppers will let off some killer fumes! With that being said, Please make sure to have good Ventilation! Our kids always complain that the smell is burning their noses. We turn on our Vent to the stove and open a couple of windows to keep the air flowing! We also recommend using gloves when handing the peppers!

The Best Homemade Hot Sauce

This is a pretty easy process and recipe! All you need is

8-10 Peppers

2 tbs Olive Oil

1 cup Water

4 cups Vinegar

20-35 Garlic Cloves Peeled and Chopped (the hotter the peppers the more garlic suggested) We use minced garlic for convenience

1 Chopped White Onion

3 tbs Worcestershire Sauce

1/2 cup Lime Juice

1 tsp Cumin

1 tsp. Salt

First begin by heating your oven to 425 degrees. Place your peppers and on a sheet pan, sprinkle with Olive Oil, and roast for about 15-20 minutes until soft and their skins begin to blister. We like the skins to slightly char but you do not want to burn them so keep an eye on them.

Next, heat a large pan to medium heat and toss in the rest of your ingredients. Once it comes to a boil turn it down to low and simmer until your onion and garlic are soft, about 20 minutes.

Now, add your roasted peppers and continue to simmer for another 20-30 minutes to reduce the mixture, and to incorporate more of the peppers flavors. Again, watch out for fumes! Next, add this to the blender until it’s nice and smooth.

Last, let it sit for 15-20 minutes, then blend again, the more liquefied the better .Using a funnel pour you delicious hot sauce into sterilized mason jars to store and enjoy!

That’s it! One important thing to remember is that the longer you let it sit, the better the flavors will mingle! We recommend waiting at least 24 hours before trying.

Indeed, there are many places that you can purchase your seeds. Home Depot, Lowes, and of course online you can always get seeds to purchase. We choose to use online stores because they have so many different types of seeds to choose from, and most of the time they let you know the Scoville level of each pepper so that you know what you are getting yourself into.

So what is Scoville?

This is a scale to measure how Hot peppers are. For example, a common Bell Pepper is 0. That means it has no heat to it, it’s more of a sweet pepper. Incredibly, this scale goes all of the way to 6,000,000! So the Super Hot Pepper that tops the chart is Carolina Reaper at 2.2 million. Of course we have grown and We have tasted these and they ARE HOT! Some don’t realize that they all do have distinct flavors as well as being hot.

We grew and then made Homemade Hot sauce from different peppers, such as, Hot Lemon, Chocolate Cappuccino, and the Yellow Brain. We noticed that when we make a sauce from peppers you really taste all of the different flavor profiles! In some cases when we cook with them I only taste the heat!

So the best way to store your sauce is in small mason jars. We have noticed that if you throw them into the refrigerator when they are still warm they can themselves. From there we order hot sauce jars like the ones Tabasco comes in, and transfer over to them. This way you can drop the sauce and not over do it! Whether you want a lot of spice, or just a little, you are in charge!
